Because you are not cooking the coffee grounds a lot of the acid and oil does not cook into the coffee, so it is much easier on the tummy and the tongue. At home I drink it black, I use blonde roast ground coffee from Starbucks. Anywhere else I have to doctor the coffee. Cold brew also has a little more caffeine.
